Happily Ever After Cookies
I don't remember how I stumbled on these cookies. I have kept the main recipe, but given them my own name. They so deserve "happily ever after" because they turn out really well every time I've made them. And I'm a big "tweaker" and not a detailed or ordered mixer. I do love chocolate chip cookies however, and can tell you I've tried many, many recipes over the years. And this one is truly my favorite.
My photos to the left are from a batch I made trying to combine the recipe below with two other recipes. HOWEVER: I vote that the BEST recipe of all is the one I've put in below. :) MMMMMMMM. Have fun. Ingredients: 1/2 cup honey 1/2 cup brown sugar 1 T. milk 2 t. vanilla orange peel from one orange 1 cup whole wheat flour 1 cup oats 1/2 t. salt, powder, soda 1/2 t. ginger, cinnamon, nutmeg 1 cup large bittersweet chocolate chips 1 cup chopped walnuts 2 eggs 1/2 c. butter, softened Directions: Assemble cookie sheets and grease. If you are short on counter space, and if you can, just stack the sheets. :) Watch out for the peanut gallery. They're always ready to be a part of the project. Someday they will be big enough to be a part. Today they must watch and wonder. :) Ingredients assemblage. My "best" recipe above doesn't include the rice vinegar, powdered milk, or applesauce. You'll have to mentally deduct from picture. By the way, when you "do honey": Fill cup with a smudge of oil and oil the inside of the measuring cup. Once it's filled with honey, the honey just slides right on out. Grate the orange and sigh happily. Mix all well. See if the dough passes inspection. No, that is not my little hand. Watch out for those dough grabbers! (or just calculate losses and let them have a little fun) Put the babies to bed and enjoy a fairly healthy and delicious treat. |
